I’ve always enjoyed baking, but have recently become so busy I can’t find the time. Don’t worry, my waist is thankful. These days, when it comes time to make a tasty treat, I’m always looking for something quick and easy. Cookie Ever (award winning). But alas, the best cookie ever is not gluten free. So I decided to make something easy AND gluten free – Rice Krispy Treats! But these have a little, colorful twist. Read on!
Ingredients12 cups rice krispies (turns out the plain ones aren’t GF, but Kelloggs sells a brown rice version that is)
30 oz marshmallows (3, 10 oz bags or 2, 16 oz bags and a scale or your eyeballs)
1 stick of butter
3 tsp vanilla
Food coloring
1. Grease a 9×13 pan and set aside
2. Melt 10 oz of mallows + 1/3 of the butter + 1 tsp vanilla together – I put it in a big bowl and microwave for 1 min 30 sec.
3. Mix in food coloring to mallow/butter/vanilla mixture until thoroughly combined
4. Add 4 cups of rice krispies and fold together until everything is incorporated.
5. Press into the 9×13 pan. I like to butter a spatula and spread the mixture into the pan. I have a friend who butters her hands and then presses the mixture. I would never do this in a million years, but that’s just me.
6. Repeat until you have nice, 3 layered rice krispy treat!
I brought these into work yesterday and was told that they were the best! Want to know my secret? I was making these late Sunday night (because I forgot I had to make them). In my haste, I added too many marshmallows! Which is awesome – we all know what happens when you get a hard rice krispy treat – the roof of your mouth gets ripped apart and it’s not awesome! Extra mallows = super gooey and delicious. And the vanilla helps too 🙂
They were a hit at the 4th of July – they had a nice, vintage vibe. If I get adventurous, I may try 4 layers – but let’s not get too crazy 🙂 The pic on top was what I took to work. I had originally intended to make them ombre….but then I got carried away with the food coloring on the 2nd layer. So I added blue and made it purple! Whew!
