Caprese, Broccoli, and Hamburger Patties

We ended up with a pretty tasty meal on Sunday night.

After looking through the fridge and lamenting that there was nothing to eat, we decided to pull together a random assortment of foods and see what happened.

Salad

2 diced tomatoes (I used the ones on a vine….but took them off the vine)
Mozzarella
Basil
Salt
Garlic
Balsamic
Olive Oil

1.  Mix the diced tomatoes with a generous pinch of salt, minced garlic, and a tsp or so of olive oil and balsamic.
2.  Lay out 4 slices of mozzarella on a plate (we use the Trader Joes mozzarella that comes pre-sliced)
3.  Pick off at least a dozen basil leaves.  Stack them and roll them like a cigar.  Then chop!  This will make nice, thin pieces.
4.  Spoon the tomato mixture over the mozzarella and top with basil!  I like lots of basil 🙂

Hamburger Patties
1 lb of ground beef (we buy the organic packages from costco)
~1/3 package of cooked lentils from Trader Joes
1 large clove of garlic, crushed
2 tbs teriyaki sauce (I use Yoshidas)
Salt and Pepper to taste

1.  Mix the above ingredients together until well blended
2.  Turn on your broiler and prep a jelly roll pan with some foil and a cooling rack
3.  Scoop out portions of beef a little smaller than a tennis ball, but larger than a golf ball and form into a patty.  Set the patties on the cooling rack.
4.  Put the pan under the broiler and cook for about 5 minutes.  Flip patties and cook for an additional 3-4 minutes until done.
5.  I still eat mine with ketchup.  Some things never get old

I also made some broccoli because it’s one of my favorite veggies.  Nothing fancy.  Just steamed with a little salt and lemon juice.
