The caramels I made last week during cookiepalooza were a big hit and a few people have requested the recipe.
great about this recipe is that it’s all in the microwave. You can make caramels over the stove but it involves a lot of stirring and a lot of temperature watching. It’s almost fool-proof in the microwave.
CARMELS
1 c light corn syrup
2 cubes butter, softened
2½ c Brown sugar
1 can Sweetened condensed milk
1/8 t Salt
1 t Vanilla
Generously butter 7×11 glass casserole dish. Set aside.
In a 3 qt bowl (glass or ceramic – not plastic or metal) mix all ingredients
together. Stir to mix well.
Heat 5 min on HIGH — Remove, whisk 2 minutes until butter is mixed in.
Heat 5 min more on HIGH — Remove, beat with whisk for 1 minute until well
mixed. Heat 8 min on HIGH — Remove, whisk, pour into 7-1/2×11-3/4 buttered
casserole. Cool overnight.
Cut (**) & wrap diagonally in wax paper (3″x3″ squares ***)
** cut caramels into 3/8″ strips, then 10-20 pieces per strip.
*** wax paper – 15 pieces of 12″ squares of wax paper yield 240 3×3 squares
(microwave) makes ~ 20 dozen

Yum! I'm thinking of dipping mine in chocolate with a little sprinkle of salt. I wonder if I could do them before Christmas!
I was just thinking about doing the same! I think it would work – but I'd recommend freezing the little pieces of caramel prior to dipping. That should help make them a little more manageable. Let me know how it turns out!
