I’m pretty sure a Costco chicken is one of the best deals out there. A cooked chicken for $5. You can’t get much for $5 anymore, let alone an entire {cooked!} bird!
One of my new favorite things is making curried chicken salad with a Costco chicken. It is a great way to prep lunches for an entire week. We eat it plain, but it’s also good in a pita, on crackers, or other carb-y platform.

Ingredients
The meat from 1 costco chicken, no skin
1 cup celery, finely diced
2 cups red grapes, halved (I like to be generous with the grapes)
2 oz slivered almonds (if you don’t have a scale, it’s a little less than a 1/4 cup)
Dressing
1/3 cup Greek yogurt (I used Fage, non fat)
1/3 cup best foods mayonnaise
1 Tbs Soy Sauce (I used low sodium)
1 Tbs fresh lemon juice
1 1/2 tsp curry powder (I used the regular kind, but you can use your favorite, madras curry has been suggested for added heat)
Combine the chicken, celery, grapes, and almonds in a large bowl and mix.
Combine the dressing ingredients and mix.
Add the dressing to the chicken mixture and stir until evenly coated. Refrigerate! Enjoy!
Getting all the meat off the chicken can be tricky. But I pride myself on removing every last bit! I make it my personal mission to remove as much meat as humanly possible….I have no idea why. The biggest tip I can offer? Let the bird cool. It’s super hot when it comes home from Costco and you end up playing a game of hot potato with your chicken. And the chicken always wins. Simply wait a few hours and then go to town.
PS I’m so neurotic about my chickens, that I even boil the carcass when I’m done. Then, I pour the cooled broth into ice cube trays to make single serving chicken broth cubes. They come in SUPER handy, you’d be surprised.
Moving on, past the chicken. Here’s my finely diced celery.
And the grapes, or as we like to call them, “puppy poison.”
And everything else. Curried chicken salad isn’t very photogenic, but what it lacks in presentation, it makes up for in taste!
