How to Make Homemade Pasta

It’s actually a lot easier than you might think.

Really!  I promise.

I was 100% skeptical as well.

Yes, it looks like a medi torture device, but it’s actually super easy to use.

Step 1:

Pasta dough!

2/3c Durum Flour
1 egg
1 tsp oil
1 tsp salt
dash of water if necessary

Mix it together in the bowl until it all starts to stick together.  If it’s too dry, add a little water.  Once it sticks together, start kneading it it is nice and smooth.  Wrap it in saran wrap and put it in the fridge for at least 30 minutes.

Step 2:

Install the roller attachment.  Divide into 4 equal pieces and set 3 aside.  Flour your work surface with durum flour.  Flatten the piece of dough slightly, flour it and roll it through the roller attachment, setting 1 (I set it at a low-ish speed).

After it comes out of the roller, fold it in thirds, flour and repeat.  Do this 5-6 times.  You’re trying to work the dough (werk it!).

Turn the knob to 3 and send the dough through.  Flour.  Turn the knob to 5 and continue until you get to setting 8.  Flour again and set aside.

Repeat the process with the remaining 3 pieces of dough.

Step 3:

Start cutting!  Swap out the roller attachment for the cutting attachment.  Send the previously rolled pieces of dough through the cutter.

Flour the individual mounds of pasta thoroughly to prevent them from sticking together.

Step 4:

Boil a LARGE pot of water and boil the pasta for about 4-5 minutes.  A large pot helps keep the pasta from sticking together.

Step 5:

While you boil your pasta, prep your sauce.  We made a mushroom/garlic/carrot/onion/oil/spinach/basil sauce.

When the noodles are done, put them directly into the sauce.  DO. NOT. RINSE.  Your sauce will stick to the pasta much better.  Don’t forget to add a little parm at the end!

Step 6:

Enjoy!  We ate ours with a side of BBQ’d shrimp and a little lemon.

Homemade noodles that someone else makes for you are definitely better 🙂 But Nick liked them and commented that it might be difficult to go back to regular noodles.
