Icebox Cake

We had a little mini impromptu BBQ this weekend with friends.  Always fun.

It was sort of our friend’s birthday, so I thought I’d make a “cake” for dessert.

Let’s talk about this cake.  My grandma and mom sometimes make it.  Mom put a little twist on it the last time I was home, so I, of course, had to add the little twist to my recipe!

that has rave reviews.  But she suggests using some sort of chocolate chip cookie that I can’t find at Safeway or Trader Joes.  This is where Grandma/Mom’s recipe comes in.

Ok, let’s back up.  What’s an Ice Box Cake?  Basically, it’s cookies and whipping cream.  You layer the 2 and let it sit overnight.  The cookies get soft and it’s delicious.  If you’re a fan of dipping your cookies in milk to soften them, this is the cake for you.  Ooooh, did I mention it doesn’t require an oven?  Even better on a hot summer day!

Ok, back to the recipe.  Instead of chocolate cookies, I used chocolate wafers.  Think of the cookie portion of an Oreo.  And I’ve always found them at Safeway.  Win!  The whipping cream is a chocolate/coffee/kahlua mix and is also quite delicious.

Finished product.  It’s a little low, but it ended up feeding 8 of us perfectly with no leftovers.  Also a win because if ANY of this was still in the house, I’d be eating it right now.  Maybe even on my cereal, I don’t even know.  It’s that good.
