In a regular white onion and a green onion had a baby, it would be a leek.
We signed up for one of those CSA fruit and veggie deliveries. 1 box of stuff every 3 weeks. Seemed doable.
And then we got 3 leeks.
I looked up a recipe and a leek and red chard quiche popped up. I nixed the crust and went for a strata.
It was WAY too onion-y.
In conclusion, not a fan of leaks. Or at least I’m not a fan of too many leaks. Do you have a good leak recipe? How about one for radicchio? I’ve got some of that leftover as well.

When we first signed up for the CSA veggie box, I got the book Vegetables Every Day by Jack Bishop. It’s an alphabetical listing of veggies w/recipies. It’s helped us out with the strange stuff that shows up every 2 weeks. There are 5 for racicchio, grilled, pan-seared w/balsamic, w/pacetta and onion, risotto w/pancetta and onion, and shredded w/caramelized onion dressing. Anything sound good?
I tried the searing option….but it seemed odd to be searing leaves. And they were SUPER bitter. Were yours?
I haven’t gotten any but now if I see it on my list I might just opt out and get something else. I just changed my chard to pink lady apples for next tuesday.
The best way to make leeks is to sweat them in butter and oil until they are soft and carmelized-y but not browned – kind of like carmelized onions. I’ve used them on homemade pizza and you should try the absurdly delicious asparagus recipe on page 2, its delicious!
Sounds like I didn’t cook them long enough. I guess I’ll give them another try. Pretty much everything you make is delicious so I probably can’t go wrong! Thanks for the tip!
Yes, you need to rinse well and saute for a while… Until they are tender. Do Yukon gold potatos, bacon and leeks sound interesting? Savory bread pudding with leeks? Root vegtable saute… With sage, butter and leeks? I put it in kimchi too.
