Yep, that’s right. Mini corn dogs.
Sounds amazing, right? I mean, who doesn’t love a corn dog. And when it’s a mini, you can have like 5 and not feel guilty…..or maybe that’s just me.
The best part? You use little smokies! So it’s a lot easier.
Batter

C. fine corn meal
1 C. flour
2 tsp. salt
1 tsp. baking powder
¼ tsp. baking soda
½ tsp. cayenne pepper
2 Tbls. Chopped cilantro
2 Tbls minced jalapenos
¼ C. chopped shallots
2 tsp. garlic
2 C. butter milk
Remaining Ingredients
1 Package Little Smokies (~2 dozen)
1 Package of skewers
1/4 cup cornstarch (for coating the smokies)
Steps
Combine dry ingredients, fold into wet, whisk and let sit 30 mins.
Put the little smokies on the skewers and set aside.
Heat oil to 350-375 (we did this outside to keep our house from getting smelly). Use a thermometer if you have one. This helps.
Once the batter is ready, get yourself all setup. You’ll need a plate/bowl filled with the cornstarch and a brush to get the excess off. Then dip it in the batter until fully coated, tapping off any excess.
Deep fry until brown. Drain on paper towel.
You can do this ahead of time and reheat if necessary.
Serve with your favorite dipping sauces. We had a mustard and BBQ that were delicious!
