Sometimes I think I’m the queen of making things more difficult. Case in point. Rice krispy treats. Arguably one of the easiest desserts on the planet. Butter, marshmallows and cereal. Leave it to me to turn something that should take 5 minutes into something that took over an hour. But was totally worth it 🙂

rice krispy treats ever, I got bold. Real bold. I decided to make them rainbow colors. ROYGBV peeps. 6 epic layers of rice cereal goodness. I wasn’t messing around.
But I only had a little cereal left. So I decided to make it in a mini cake pan – roughly 6×6. I estimated the amount of cereal I’d need for each layer. Roughly 2/3 of a cup – we’ll call it 0.6c to make it a little easier. Then I did a little math to figure out the necessary proportions for each layer. 18 years of math and it almost always comes back to ratios (not always, but often).
What does this mean for you? You’ll have to do a little math to figure out how much butter and marshmallows you’ll need. The good news? It’s hard to screw it up.
1. Microwave the mallows, butter, and vanilla on high for 30-60 seconds.
2. Add food coloring and mix until coloring is well combined.
3. Add cereal and mix.
4. Pour into well greased baking dish.
5. Repeat for remaining layers/colors.
That’s really all there is to it. So easy! But I bet you want to know how to make the rainbow. Right?
I started with purple on the bottom (it doesn’t really matter, but my OCD preferred). When you’re all done, instead of cutting little square, cut ~0.5-1″ wide strips (mine were about 0.5″ wide by 6″ long). Then you just bend it – purple on the inside, red on the outside (if you’re still having trouble visualizing, think about it like this. In the picture below, you’re looking at the cut surface). Easy peasy! The red will stretch a little and the purple will get squished. But that’s ok. If it really bothers you, go easy on the purple and a little heavy on the red.
Then, add your marshmallow clouds. I just ripped a few in half and stuck them onto the bottom. It takes a bit of finessing to get it to stand upright, but nothing a little more marshmallow can’t fix! (The inspiration for the marshmallow clouds goes to Nick)

I just have a quick question for you. I am in the process of making this as a topper for a birthday cake, did you have any issues supporting it or keeping it from collapsing? I’m worried that the arch with cave in.

I’m sorry, I just saw this comment. It’s probably too late, but no, I didn’t have a problem. I think if you let it sit out overnight, laying on its side, that will help it firm up. I’m sure it turned out great!
so did u make one layer then bend it then second and so on or you added all the colored layers to the pan and bent them all together at one time ? trying to understand how much time i will have in between layer to work and mold before it hardens up.
I layered all the colors in a single pan. Then sliced strips. You’re totally right, it would take forever to do it 1 layer at a time!

Hi Katrina! I did a version of these with 3 layers and it fit in a 9×13 pan (they were definitely “tall”, so you could cut them a little smaller) – http://www.brynashley.com/best-rice-krispty-treats-ever. It used 12 cups of rice krispies – if I remember correctly, the pan was quite full. If you want to make the rainbows, use the 12 cup recipe and divide it by 6 – each layer should have 2c rice krispies + 5oz mallows (or half a 10oz bag) + 1/6 cup of butter + dash of vanilla + food coloring. Have fun! (it’s amazing how easily you can turn a simple recipe into something complicated! but it just looks soooo cute!)
