This is my new favorite salad. My friend, Brooke, introduced me to it and I’ve been making different versions of it for the past few weeks.

base model includes: lettuce, craisins, almonds, goat cheese, and dressing (some sort of a balsamic/olive oil/garlic works fine, you just need to get the lettuce wet)
Here’s the version I take to friends’ houses.
Ingredients
2 romaine hearts or whatever lettuce you like
1.5c Kale, sauted in olive oil and garlic and chilled in the fridge
1 orange cut up into bit size pieces
1/4c sliced almonds, lightly toasted (they sell a big bag of these at costco)
1/4c craisins (they also sell a big bag of these at costco)
1/4c goat cheese, crumble as best you can (I got a goat cheese log from TJs, but recently learned they sell it in the fancy cheese section at costco)
Poppy seed dressing, I got the Panera brand and it’s tasty
1. Get the bag of tuscan kale from Trader Joes. Get a large pot and add some olive oil and around 2-3 cloves of crushed or finely chopped garlic. Saute the kale just until it is wilted. Store it in the fridge. Ours lasted 3 days before we ate it all.
2. Cut up the romaine hearts and add it to a large bowl. Add 1.5 to 2c of your prepped kale (make sure it’s chilled, unless you’re cool with warm kale).
3. Toast your almonds. We have a toaster oven and it takes about 2 minutes to get them light brown.
4. Add the almonds, craisins, cheese, orange, and dressing to your greens and toss. That’s it.
You can really make whatever version of this you like. Just play around with it. What really makes it tasty is the poppy seed dressing and the goat cheese.
Honestly, goat cheese makes everything better.

We add whatever fruit happens to be in season most of the time too. Thinly sliced apples or pears. Oranges sound fab too, though! I can just have Lana peel a dozen cuties…! 🙂 YUM!
